You are correct, Geomview does not plot graphs directly. It can be
used as the display viewer in conjunction with a program that computes
the plots. Mathematica or Maple is one option.

Some people have written modules that support specific kinds of
graphs, like implicit surfaces (Pisces,
http://www.geom.umn.edu/~fjw/pisces/) or complex functions (cmplxview,
included in the Geomview distribution).
